In 2010, San Francisco’s street-food scene was taking baby steps, trying to walk the city’s complicated permit requirements. To make it, you needed passion and vision—exactly the two things that fueled the launch of Señor Sisig’s first food truck that year. Inspired by the success of Roy Choi’s Kogi Korean taco truck in Los Angeles, high school friends Evan Kidera, who has an MBA from San Francisco State, and Gil Payumo, an experienced chef, saw Filipino food as a Bay Area cultural force ready to break out.
Driven by word of mouth on social media and the popularity of San Francisco’s newly launched Off the Grid street-food events, Señor Sisig quickly became a local phenomenon. Chef Mohammad Abutaha moved from Amman to the Bay Area, where he couldn’t find the flavors from home, so he started a pop-up to satisfy his cravings and introduce Jordan-style street food to others. Shawarmaji’s menu is short and simple, which is best for the small operation.
The shawarma is made with chicken (Abutaha hopes to offer lamb soon, too), which is marinated in yogurt and flavored with a seven-spice blend. Abutaha toasts his spices, which adds a smoky, slightly bitter flavor to the sweet-leaning blend. for the wrap, he shaves the meat from the spit to order, adds homemade pickles and a generous slathering of potent toum, tightly rolls it up into a slender cylinder using a large flour tortilla – yes, a tortilla — and presses it on the flat top with a cast-iron press. Abutaha said in Jordan the wraps are often smaller, but there are places that serve the long version, “missile-style” like he does.

Yingji Huang became fascinated with Japan after traveling to Tokyo at age 15 for a summer vacation that turned into a three-year sushi chef apprenticeship. Eager to bring his newfound skill set to the States, Yingi moved to Los Angeles, where he owned Kippa in Beverly Hills and established Asia De Cuba Restaurant Group’s sushi program. A decade later, Yingji’s aspirations became a reality, as he partnered with friend and former colleague Andy Liu to open sushi bar Kakui in Oakland’s Montclair neighborhood. Chef Mohammad Abutaha moved from Amman to the Bay Area, where he couldn’t find the flavors from home, so he started a pop-up to satisfy his cravings and introduce Jordan-style street food to others. Shawarmaji’s menu is short and simple, which is best for the small operation.
The shawarma is made with chicken (Abutaha hopes to offer lamb soon, too), which is marinated in yogurt and flavored with a seven-spice blend. Abutaha toasts his spices, which adds a smoky, slightly bitter flavor to the sweet-leaning blend. for the wrap, he shaves the meat from the spit to order, adds homemade pickles and a generous slathering of potent toum, tightly rolls it up into a slender cylinder using a large flour tortilla – yes, a tortilla — and presses it on the flat top with a cast-iron press. Abutaha said in Jordan the wraps are often smaller, but there are places that serve the long version, “missile-style” like he does.

Yingji Huang became fascinated with Japan after traveling to Tokyo at age 15 for a summer vacation that turned into a three-year sushi chef apprenticeship.
